As you can tell, my post on wednesday night didn’t happen. Time ran away with me and there was a bit of a dinner disaster in the kitchen. Anyway, on Tuesday evening I made our favourite vegetarian chilli:

There’s always quite a bit leftover so the plan was to use the chilli as a topping for a baked sweet potato (yum) and as a pizza topping for a GF pizza base. However, I have no photographic evidence because the predictable happened; I was taking the pizza out of the oven, my clumsiness got the better of me (I had post workout low blood sugar levels anyway), and the pizza fell, face down, decorating our kitchen floor. On this occasion the remains were unedible. These things happen. In my haste and hunger I didn’t take a photo of the baked sweet potato that I was eating (the pizza was for Tom). And there you have it. Anyway, the recipe for this chilli (vegan friendly) is found in one of my favourite books, The Great American Detox Diet by Alex Jamieson.

Sad news about the pizza! Your vegetarian chili sounds delicious. We just take a can of mixed beans, can of black beans, can of tomatoes (all undrained), then season accordingly. It’s yummy! Here’s another great rice recipe for ya: http://tinyurl.com/ccd28k
